Abstract


Aktivitas tripsin-inhibitor pada biji turi lebih besar daripada aktivitas inhibitor kedelai dan koro, masing-masing adalah 6,06, 4,31, dan 2,41 TIU/gr bahan kering. Pemanasan selama 1 jam, pada suhu 120°C dan tekanan 1 kg/cm3 dapat menurunkan aktivitas tripsin-inhibitor sebesar 74%, sedangkan 1 jam perebusan menurunkan sebesar 47%. Isolasi tripsin-inhibitor secara kromatografis menghasilkan isolat sekitar 20% berat-kering. Pemanasan pada suhu 100°C selama 5 jam menurunkan aktivitas tripsin-inhibitor hasil isolasi sebesar 70%.
